Microbiological criteria for foodstuffs

  • Enterobacteriaceae Enterobacteriaceae are a family of bacteria which are regarded as hygiene indicators
  • Salmonella A member of the Enterobacteriaceae family, associated with a wide range of food and animal feeds
  • Listeria Listeria species are associated with a wide range of food types, L. monocytogenes is pathogenic in humans and can grow at temperatures below 4°C
  • Staphylococcus aureus A pathogen which is carried by aproximately 40% of the population
  • E. coli A pathogen associated with a wide range of food types
